I have lived with Wal-Mart and Target cheap knife sets for many years and got by just fine. But part of me wanted to know what I was missing spending by spending some money on good knives. After finding at recommendations I decided to go with this knife as my first "nice knife". Wow, the difference is worth the money. This knife is sharp, slices and chops whatever I have thrown at it, and with a merge passes on a honing tool it stays sharp. It feels great using it and the deal with has a nice curve in it that fits well in my hand. Needless to say, Wusthof has a lifetime customer in me and I have started building a set blade by blade. It's worth it.

We went window shopping in a Sur Le Table the other evening and I just went to 'look' at knives because my Henkels just don't do it for me anymore. This young sales guy did an excellent job of having me try discrete knives on some carrots. He then handed me this knife and I tried the same with it: I was floored. Sufficient so that my wife bought it for me on the spot. This is hands-down the best knife I've ever owned.

Great knife that will be your favorite! : Wusthof 4183-7 Wusthof Classic 7-Inch Santoku Knife, Hollow Edge

I have tons of Wusthof knives, they're as a matter of fact astonishing and I've had them for years and years. I bought this knife on a whim, since I've been more of a fan of Cook's knives in the past.

I don't know how I lived without this fabulously sharp knife. I use it for almost all my slicing and chopping now. My housekeeper and I fight over this knife.

I bought the hollow edge for thin slicing and it works perfectly, especially on tomatoes and onions, which I have to chop in a tiny yet correct dice for salsas.

I sharpen this knife with my chef's selection sharpener and have seen no damage to the egde or hollows.
