Blades are made of hard molybdenum/vanadium stainless steel and "face-ground" with a long taper rather than a short bevel so edges remain sharp longer than even the best high-carbon stainless-steel knives. Edges also are ground at a more acute angle than traditional European-style knives and arrive from the factory razor-sharp. Although Global also makes a "heavyweight" line for cooks who prefer hefty knives, its original knives--of which this 8-inch chef's knife is an example--have thinner blades and are lighter than traditional European-style knives. Global also dispensed with bolsters on its original knives to reduce weight. Balance is achieved by injecting a precise amount of sand for a particular blade style into a hollow handle. To ensure balance is continuous, the sand flows inside the handle as a blade is maneuvered. A finger notch between blade and handle provides safety. Stainless-steel handles are Global's most striking feature. They're molded to fit the hand and dimpled to resist slipping. Smaller around than many European-style handles, they're easy for small-handed cooks to grasp and seamless for sanitation. Global recommends using a ceramic sharpener or a diamond steel instead of a metal sharpening steel for its knives, supplemented by a synthetic whetstone, a ceramic whetstone, or a Shinkansen sharpener. Global also makes a Sharpening Guide Rail so blades can be honed on a whetstone at the proper angle. Global knives should be hand washed to protect edges. Knife. Ever. : Global G-2 8-Inch 20cm Cook's Knife I baught my 8" global chef's knife about 5 years ago. It has been of great use in the kitchen and remains one of my popular knives on the market. The molybdenum/vanadium steel of the global knives holds an edge far longer than its Henkles/Wustolf counterparts. My only complaint is the cope build which does not suit my gripping style, nor my large hands. I don't mind the steel handles, although they do lead to slippage and some loss of grip. My main problem is with the tapered bolster, which is roughly a lack of bolster altogether. Coupled with the thin spine and heal of the knife, extended use can be uncomfortable for the hand. I very propose globals, but I might propose the 8 1/4" heavyweight model, which appears to have a more appropriate cope build and less tapering to the Bolster. Although all knife clubs like to claim their knives are dishwasher safe, please, Please, don't put your knives in the dishwasher.

I wanted some good knives to take with me when I traveled and catered. I have not used the knives yet, but they seem to be of good quality. My gripe is that this case is Enormous! As are some of the knives! Some are as long as my forearm...what do you use knives that long for?! verily wish there had been some sort of book or pamphlet included to state what each piece was meant for...

Made from VG-10 stainless steel, Shun knives are specially constructed to be harder, less brittle, but also more flexible than traditional steel formulations. The VG-10 core is clad with 16 full layers of SUS410 high-carbon stainless steel on each side, for a total of 33 layers. These layers not only protect the VG-10, they create an exquisitely detailed surface reminiscent of Damascus or pattern-forged steel, the kind once used for Samurai swords. As a result, the knives are simply stunning to look at--much like antique Damascus knives but without their tendency to rust.

The 6-inch blade of this chef's knife works great for slicing, chopping, dicing, and more. Like many Asian-style cutlery, the knife's handle is especially suited to smaller users. In contrast to the traditional round profile, however, Shun's are D-shaped to prevent the knife from twisting in the hand, which provides extra stability and a firm grip. The handle is made from ebony-colored PakkaWood, a fused blend of hardwood veneers imbued with waterproof resin that combines the warmth and traditional look and feel of wood with the strength and durability of plastic. The offset stainless-steel bolster is designed for ergonomic comfort and maximum safety, while a stainless-steel end cap provides the finishing touch. Hand washing the knife is recommended. I have a consolidate of Shun utility knives in the stainless steel line. This is my first Shun classic, and my first Shun chef knife. I already knew it would be sharp just like my other Shun knives. This one with the wood handle is gorgeous to look at. The size is just right for my small hand. The size is excellent for most daily cooking.

The first thing that impressed me that the handles were not wooden and they were very very sturdy. It has that welded metallic feel to it. The knives at relatively heavy and the sharpener is Amazing! I sharpened all those suckers in a few minutes and everybody was as sharp as they can be. Each knife cut straight through my veggies and meat like butter and was still sharp after. I got this set along with my Catskill Craftsmen Wood End Grain Cutting Slab which is good for keeping your knives sharp and "healthy." Do not use these knives on plastic, glass or composite cutting boards. Spend in a good block and you will have many good years out of these. I have spent money on 1 chef knife equivalent to the price of this whole block and have had the same, maybe even good cutting contact with these knives. Just remember that you need to wash these knives right after you cook and wipe them dry so that they can do their job well. Do not put in the dishwasher and do not leave in the sink to soak or with other dishes.
